Singapore Rojak

The name Rojak in Malay language means “mixed” and the dish exemplifies the cultural diversity of Singapore, including both Chinese and Malay elements in its ingredients. In this collaboration with Tigerlily Patisserie, we have put together our favourite elements of Rojak into a chocolate bar—get ready to experience umami spices, sweet and tangy notes with playful textures.

Meet Maxine Ngooi, chef and co-founder of Tigerlily Patisserie. Maxine began her baking journey as a self-taught home-baker. Despite lacking formal training, she climbed the ranks training under renowned chefs like Cheryl Koh and gained experience at Michelin-starred restaurants before embarking on her own journey by opening Tigerlily Patisserie, receiving accolades like World Gourmet Awards' Pastry Chef of the Year 2022 and 3 spoons at Sweet Spot Awards.

Behind the Bar

The flavours of a Rojak is not something you simply forget when you try it in Singapore. In our interpretation in the form of chocolate, we infused dark chocolate with youtiao, shrimp paste, coconut sugar, ginger flowers, dried shrimp and lime leaf, inspired by the sweet, tangy and umami spices found in Rojak. Drizzled with tart pineapple bits, get ready to indulge in a treat like no other, perfect for when you’re missing home.
