T’s Tea is a range of artisanal tea curated by Kanako Satsutani of craft chocolate purveyor Tomoe Savour based on the concept of tea to go with chocolate.

The Purple Hongcha (紫娟紅茶) from Yunnan’s Nan Nuo Mountains is one such tea. High in anthocyanin and theaflavin, it is naturally sweet with a pleasant astringency and flavour reminiscent of red shisho. Pairing it with fruity and herbaceous Peruvian Piura Blanco cacao in a 55% milk chocolate together with a touch of pickled plum makes for a party in the mouth.

Ingredients: Cacao, cane sugar, cacao butter, milk powder, tea leaves, sour plum (plum, sugar, salt).
